This is perfect; I was looking for a new recipe that I could make without having to use meat. I only wish I'd seen your post before I hit up the grocery store today. I will definitely be trying it out next week!

I made this for dinner tonight, with a few modifications. They were YUMMY! I added some fresh cilantro and lime juice to the rice and didn't mix everything together. I used ground turkey instead of hamburger, because it was on sale this week. We forgot to put cheese on them, but we really didn't miss it.

Thanks for sharing the recipe! Next to try is the curry chicken one :)

Thanks for sharing your recipes. I made the rice and lentil (no sausage) soup a while back, and I thought it turned out quite well. I'm glad for your recipes for three reasons:
1.) They're simple (at the end of a day on team, I don't always have the emotional energy to invest *lots* in a meal).
2.) They make a bunch of food (good for cooking for a team!).
3.) They're yummy.
We've had burritos on team before, which have been a great hit, but no one has made them in one big pot before. And they sell this bread in the market that is huge, circular, and remarkably thin -- works perfectly as tortillas (though I doubt that is how our Palestinian friends and neighbors use them.)
Anyway, thanks again, and I'm sure a Mrs.Micah-inspired bowl of burritos will appear on the CPT Hebron supper table in the next three weeks (phew! Only three weeks left on team! Can you believe it?).
Lots of love,
Jess

I love it when you share these recipes! We tried the sausage and lentil soup and it was delicious. We'll have to try this one - it's right up our alley. Thanks!

While the rice takes some time, this recipe only requires about 15-20 minutes of real attention. Very handy that way! :)

I made it while friends were over and was able to hang out with them.
